You butter believe it! Edinburgh Castle made from shortbread goes down a treat with passengers

A royally impressive model of Edinburgh Castle constructed from thousands of shortbread pieces is currently on display in the airport, and you butter believe it's impressive.

Walker's Shortbread brought the edible pop-up to EDI at the start of the month and it's proving a hit with passengers fort-unate enough to have caught a glimpse while passing through.

It's in position just after the exit from security until August 31 - you can't miss it - and at peak times Walker's will be there handing out free shortbread pieces and postcards, so you can taste one of Scotland's favourite sweet treats before jetting off.

The model itself was crafted by renowned UK food artist Prudence Staite and is made of 2,933 shortbread pieces (take note, this has quiz question written all over it).

The installation comes as Walker's Shortbread note a rise in popularity of their products in airports and train stations in the last year, pointing to an increased appetite for its products in travel retail.
